Here’s a great recipe for slow-cooked cube steaks.
Chef Tom’s Cowboy Cube Steaks
Sylvan Dale’s Chef Tom Woolrich likes this Cube Steak recipe (aka Tenderized Round Steaks):
Fixin’s
Three Cube Steaks
8 oz can of diced tomatoes
Teaspoon of beef bouillon paste mixed into 1 ½ cups of water
One-half onion
Celery stick
Seasonings: Seasoning salt (Lowry’s), Cayenne Pepper, Oregano, Thyme, garlic, splash of Worcestershire sauce
One half lemon
Doin’s
1. Sprinkle the steaks with seasoning Salt and sear briefly in a frying pan with olive oil over medium high heat.
2. Chop up the onion and celery and mix in a bowl with the diced tomatoes, then season to taste with Cayenne Pepper, oregano, thyme, garlic, Worcestershire sauce and lemon.
3. Toss the whole shootin’ match into a crock pot, set on low heat, add some potatoes, carrots or other veggies if you like. and go tend cows or fix fence for four hours.
4. Try not to drool on your shirt when you return to your kitchen. Enjoy!
Note: When out on the trail, substitute pine needles and prickly pear for seasoning.
