Our price is based on “hanging weight,” which is the weight of a side of beef after it hangs in the curing room for a minimum of 14 days. If you buy a side of beef, you end up with around 280 pounds of packaged, ready-to-eat meat, averaging about $5.14 per pound.

All weights and pricing are estimated as beef weights vary with each steer.

The approximate number of cuts out of a side of beef is estimated as follows:

14 ~ T-Bone Steaks (3/4 inch thick)

14 ~ Rib Eye Steaks

6 ~ Sirloin Steaks

18 ~ Round Steaks, top and bottom

1 ~ Flank Steak

8 ~ Chuck Roasts (or steaks)

2 ~ Sirloin Tip Roasts

1 ~ Heel of Round

2 ~ Rump Roasts

1 ~ Brisket

6 ~ Stew Meat (1 lb pkgs.)

3 ~ Short Ribs (1.5 lb pkgs.)

4 ~ Soup Bones (Shank - 1.5 lb pkgs.)

80 lbs. of Ground Beef (packaged in any size or made into patties for an extra charge)

Custom Orders: When you purchase a side of beef it can be processed according to your preference. If you need special cuts, or would prefer stew meat and less ground beef, or would prefer a thicker cut on your steaks, just let us know when you place your order. (Customized cuts or packaging may carry an additonal cost.) See below for a recommended standard assortment.
