Producing high-quality, tender beef on grass is a challenging art and science. We continuously improve the “tenderness genes” in our herd by having our beef tenderness tested by a third-party meat lab.
In addition, we pay careful attention to the three key practices that increase tenderness: proper age of slaughter, nutrient-rich forages during the last ninety days of finishing, and low-stress cattle handling.
Animal welfare is of vital importance to our beef program. On cattle drives and roundups, we know that “slower is faster.” We’re improving our cattle handling facilities along the lines recommended by animal behavior specialist Temple Grandin, and we are shortening confinement periods to a minimum.
Recently we’ve instituted pasture-based weaning to lower stress on both mamas and calves when they are weaned.
