We are now taking deposits ($100) for wholes, halves, quarters and eighths to be processed in Fall 2013.

Our delicious, pure grass-fed beef will be made available in order of deposits received. We currently have in stock organ meats (heart, liver, tongue), and are likely to have ground beef ready for sale in April 2013.

Smaller packages are not currently available. Individual cuts may be purchased at Rocky Plains Meats, which carries our beef.

Like most grass-fed beef producers, we base our bulk sale prices on the readily-available “hanging weight” provided to us by the processor. Hanging Weight is the weight of a side of beef after it hangs in the curing room for a minimum of 14 days.

Packaged weight is measured after bone and trim is removed. The packaged weight of ready-to-eat meat is approximately 68% of hanging weight. In other words, from a side of beef with a hanging weight of 325 lbs, you end up with approximately 221 lbs. of packaged meat, which works out to about $6.35/lb. for all the standard cuts of meat in a side of beef.

An eighth beef is created by dividing a quarter in such a way as to make the two eighths roughly equal in cuts and weight.

For example, if you desire special cuts or would prefer more stew meat and less ground beef, or beef patties instead of one-pound packages, or if you would prefer a thicker cut on your steaks, just let us know when you place your order. (Customized beef cuts or packaging may require a surcharge.)
