Current Beef Availability (February-March 2014)

The demand for grass-fed beef is growing fast, and we are already three-quarters sold out for our winter/spring availability. Beef is provided in the order that deposits are received. As of February, those who place bulk orders can expect to receive their beef in late March or April.

We are taking advance deposits of $100 on wholes, halves and quarters for beef to be processed this winter/spring.

As of February 2014 we have ground beef on hand. The ground beef is super-lean, 10% or less fat, and comes in 1 lb. vacuum-wrapped packages. Ten pounds is the minimum purchase. Prices are shown below.

Bulk prices based on hanging weight plus processing fees.

Like most grass-fed beef producers, we base our bulk sale prices on the readily-available “hanging weight” provided to us by the processor. Hanging Weight is the weight of a side of beef after it hangs in the curing room for a minimum of 14 days.

Packaged weight is measured after bone and trim is removed. The packaged weight of ready-to-eat meat is approximately 68% of hanging weight. In other words, from a side of beef with a hanging weight of 290 lbs, you end up with approximately 197 lbs. of packaged meat, which works out to about $6.63/lb. for all the standard cuts of meat in a side of beef.

An eighth beef is created by dividing a quarter in such a way as to make the two eighths roughly equal in cuts and weight.
